2) Mix Mash yam + melted butter + maple syrup + whipping cream + salt + pepper +lemon juice
3) Strain
Candied pecan
1) Melted butter + brown sugar + white sugar + maple syrup
2) 1)cooking during put the pecan
3) Cool down on a sheet pan
Fish stock
1) Fish born + vegetables + black pepper corns + bay leaves + 3~4pieces of garlic + fennel seeds or thyme + cold water
2) Cook over low heat for 2hours
Twice baked potatoes
1) Foil -> covering oil to potatoes -> 400 Fahrenheit / 1hour
2) Taking out potatoes inside - > mashed
3) Mashed potatoes +melted butter + salt + pepper + mixed chees
4) Filled up the mash in to the potatoes peel
5) Kept in the cooler
6) Re-heat them up when we get the order (put melted butter on the top)
Dark chocolate demi-glace sauce
1) Make a roux (melted butter + dark chocolate -> +flour)
2) Put the boiling brown stock
3) + red wine + salt and pepper
4) Strain
Risotto
1) Prepare green beans
2) Prepare to boil fish stock
3) Perfectly cook the chopped shallot with oil
4) 3)+ risotto
5) While we put the fish stock as much as possible
6) When rice cooked around 90% - > put green beans
7) Cool down on the sheet pan (90% cooking)
